{Skinny Beef Casserole}

One of the many great things about being snowed in last week was I got the opportunity to try out some new, hearty, and healthy dinner dishes.  I came across this recipe on Skinny Mom, and I was immediately drawn to the picture.  It looked so delicious, and I couldn't wait to try it.

I swapped out the beef for ground turkey meat, and I have also added mushrooms and other veggies to the recipe.  Overall, this is so simple to prepare, and it is husband and wife approved in my house!!  I hope you all enjoy it as much as we do!!
{Skinny Beef Casserole}
Ingredients:

1 pound ground sirloin
1/2 cup chopped onion            
1/2 cup chopped red pepper
1/2 cup chopped green pepper
3 garlic cloves, minced
3 cups cooked whole wheat wide egg noodles
1 1/2 cups frozen peas
1 15 ounce can tomato sauce
1 can cream style corn
1/2 tbsp chili powder
1/2 tsp red pepper flakes

Directions:

1) In a large skillet, cook the sirloin, onions, peppers, and garlic over medium heat until meat is no longer pink. Drain.

2) Combine meat, peppers, and onions with cooked pasta, corn, and peas. Add tomato sauce, chili powder, and red pepper flakes. Stir to mix all ingredients and transfer to a greased 3-3.5 quart baking dish.

3) Cover and bake at 350 degrees for 40 minutes or until heated through and enjoy!
